The Fall into Autumn Topic this week is favorite fall recipes we enjoy.
I love to make soup this time of year. One of my favorite memories of my grandmother is that whenever I went to visit she always had a pot of homemade soup made for me. I love the smell of soup cooking.
One of my favorite recipes is Portuguese Kale Soup. It has lots of veggies and lots of flavor!
Here is the recipe:
You need:
1 bunch kale - chopped
1 small head of cabbage - chopped
2 medium onions - chopped
4 carrots - sliced into thin rounds
4 medium potatoes - chopped
1 can tomato sauce(small) or diced tomatoes(16oz)
1 piece portuguese sausage(chourico or linguica) -chopped
1 -2 large cans of low sodium chicken broth
1 can of white or red kidney beans(16oz) - drained and rinsed
olive oil
red pepper flakes - optional
In a large pot cook onions and sausage until onions are tender.
Add carrots and potatoes and chicken broth and bring to a boil.
Add cabbage, kale and tomato and reduce to simmer. Add more chicken broth OR water as needed.
Simmer about an hour until carrots and potatoes are tender - add kidney beans and heat thru.
Serve with fresh loaf of crusty bread.
You can add or delete any of the veggies to match your tastes. amount are just suggestions - you can add more or less of any ingredient.

2 you can really eat kale? I thought that people planted it to keep the moose from eating everything else.
